Chiba "Peel S" Turning Slicer is a practical tool that will help you master one of the most demanding Japanese slicing techniques – katsuramuki – in a matter of seconds and without years of training with a knife. This technique is mainly used on daikon or other root vegetables and usually requires high skill and precision. However, anyone can do it with this slicer. With the help of this tool, you can cut a thin slice of vegetable, which can be several meters long.
The device works on a simple principle – you fix the vegetable, lift the blade and start turning it with the crank. The blade moves from side to side and creates perfectly thin, even slices with a thickness of about 0.5 mm. The result is fine noodles or sheets, ideal for salads, side dishes or decorative dishes.
It is especially suitable for harder vegetables such as daikon, potatoes, beetroot or zucchini. Soft vegetables such as cucumber are not ideal for this method of slicing due to their soft centre.
