Japanese Deba fish knife – Shirogami No. 2 (150 mm, black forged blade)
Product description
This traditional Japanese Deba knife with a blade length of approximately 150 mm is intended primarily for fish processing, including slicing, separating heads and working with bones. The design of the knife corresponds to the classic concept of Deba knives, which combine high weight, a massive blade and extreme stability during cutting.
The blade is made of Shirogami No. 2 carbon steel, which is valued for its exceptionally fine edge, high sharpness and very easy sharpening. Thanks to careful hand forging and welding, the blade has a uniform and dense material structure, which ensures excellent cutting properties and high durability. Its performance is close to Shirogami No. 1 steel, while offering a very balanced ratio of sharpness and controllability.
The blade surface has a traditional black forged finish (kurouchi) , which underlines the artisanal character of the knife and partially protects the surface against external influences. The massive geometry with a thick back allows safe work even during more demanding tasks where higher strength is required.
The handle is made of cherry wood (Sakura) , which is pleasant to the hand, lightweight and durable enough for everyday use. The round shape of the handle corresponds to the traditional Japanese Deba knife style and the plastic ring protects the joint between the blade and the handle from moisture.

Knife maintenance recommendations
After each use, rinse the knife, dry it thoroughly and store it in a dry place.
For longer storage, we recommend lightly treating the blade with oil intended for knives.
Warning – carbon steel knives
Carbon steel is not stainless and can darken or rust if not cared for properly.
These changes are natural and do not negatively affect the functionality of the knife.
