This Japanese Petty knife (135 mm) was made in Echizen City, Fukui Prefecture – an area with over 700 years of knifemaking tradition.
The compact Petty knife is designed for precise work, such as cutting fruit, vegetables, herbs or smaller pieces of meat and fish.
The blade is made of DP Gold multi-layer stainless steel , with a core of highly durable semi-stainless steel covered with two layers of stainless steel. This combination provides a great balance between sharpness, durability and ease of maintenance .
The shiny hammered surface of the blade not only enhances aesthetics, but also creates micro-spaces that reduce food adhesion to the blade - making slicing smoother and cleaner.
The handle is made of waterproof laminated plywood , complete with a ferrule , which prevents water from penetrating and dirt from settling between the blade and the handle.
