Product description

This Japanese Santoku kitchen knife was made in the Echizen region (Echizen city, Fukui prefecture) , which is one of the oldest and most respected centers of Japanese cutlery. The area is known as Echizen Uchihamono and has been producing quality work knives for everyday use for centuries.

The blade is made of three-layer Chromax steel, developed by Takefu Special Steel. The core is made of V Silver No. 1 , a semi-stainless steel that combines the high sharpness of carbon steel with better corrosion resistance. The sides of the blade are clad in SU410S stainless steel, which increases moisture resistance and makes maintenance easier.

Thanks to this construction, the knife maintains a sharp edge for a long time, is easy to sharpen and requires less care than classic carbon knives. Santoku is a universal shape suitable for cutting meat, vegetables and fish and is an ideal choice for everyday work in the kitchen.

The black plywood handle is equipped with a ferrule that protects the connection between the blade and the handle from moisture and dirt. The design is hygienic, practical and suitable for longer work.

Knife maintenance recommendations

After each use, rinse the knife, dry it and store it in a dry place.
Regular fine grinding will extend the life of the blade and maintain optimal performance.


Warning – semi-stainless and stainless steel knives

Although Chromax is more resistant to corrosion than classic carbon steels, we still recommend drying the knife after use.
Prolonged exposure to moisture may lead to stains.


Notice

Not suitable for dishwashers or dishwasher dryers - high temperatures and chemicals can damage the blade and handle.
The knife is not intended for cutting frozen foods or extremely hard ingredients.
