This Gyuto knife (Kirituke Gyuto) was made by the Japanese brand Isshin Hamono in Japan. The knife belongs to the Uzanami (渦波) series, which is known for its beautiful 67-layer damask pattern and extremely precise workmanship.
The blade is composed of a hard core of AUS10 (hardness HRC 60) and clad with 67 layers of stainless Damascus steel . This material offers an excellent balance between sharpness, hardness and corrosion resistance , while maintaining a sharp edge for a very long time.
The special "hamaguri" (conch-shaped) profile ensures smooth slicing with minimal resistance - the knife easily penetrates the ingredients while preventing slices from sticking to the blade. The result is precise, smooth and comfortable slicing even during prolonged use.
The handle is made of hard oak wood with a Japanese lacquer finish (urushi) , which ensures excellent resistance to moisture and wear . The elegant octagonal shape provides a firm and comfortable grip for both right- and left-handed users.

Sharpness & maintenance
AUS10 is a quality stainless steel that requires only basic care.
After use, rinse the knife, dry it and store it in a dry place.
To maintain maximum sharpness, we recommend regular sharpening on water stones .
The knife is not suitable for cutting bones, frozen foods or hard ingredients - use special knives (e.g. deba or honesuki) for this.
