This Kiritsuke Gyuto knife comes from the limited Uzanami (渦波) series by the Japanese manufacturer Isshin Hamono . The series is characterized by a distinctive 67-layer Damascus pattern and a high level of hand-crafted craftsmanship, where the emphasis is not only on performance but also on aesthetics.
The blade is made of san-mai construction - a hard core of AUS10 stainless steel (HRC approx. 60) is covered with 67 layers of stainless Damascus steel. This combination provides a very sharp and stable edge, long blade life and high corrosion resistance. The knife is therefore suitable for both professional kitchens and demanding home users.
The special hamaguri cut (conch profile) ensures smooth passage of the blade through the raw material, reduces resistance during slicing and limits the adhesion of the slices to the blade. The result is a smooth, controlled cut and high comfort even during longer work.
The handle is made of oak wood and treated with traditional Japanese urushi lacquer, which increases resistance to moisture and wear. The octagonal shape provides a secure and balanced grip for both right-handed and left-handed users.
Each piece is hand-finished and, thanks to limited production, it is a knife with a distinct collector's and utility character.
