This handmade knife comes from the Masutani Hamono Seisakusho workshop, which has been preserving the 700-year-old tradition of Echizen Uchihamono blacksmithing for four generations - the first area in Japan to be officially recognized as a manufacturer of traditional crafts. Masutani knives are known for their exceptional sharpness, elegant appearance and ease of use. The forged blade of premium Japanese VG10 stainless steel is surrounded by a 17-layer Damascus sheath, which creates a unique wave-like suminagashi pattern. Each knife is unique - no two designs are the same.
VG10 (V-Gold No. 10) steel is a premium stainless steel alloyed with molybdenum, vanadium and cobalt, which excels in extreme sharpness, long blade life and wear resistance. Properly performed hardening, adapted to the season, gives the blade its "soul" - the perfect balance between hardness and ease of sharpening.
The thin blade, just 1.8 mm thick, makes slicing extremely precise and smooth. The knife is perfect for everyday kitchen work - from meat, vegetables to fish. The handle made of laminated, reinforced wood with a ferrule is not only durable, but also pleasant to the touch and hygienic.

Sharpness & maintenance
- Thanks to its high hardness (approx. HRC 61), the knife retains its edge for a long time.
- To maintain maximum sharpness, we recommend regular sharpening on water stones.
- The knife is not dishwasher safe. Rinse and dry immediately after use.
