This Japanese Santoku kitchen knife comes from the Masutani Hamono Seisakusho workshop, which has been continuing the more than 700-year-old blacksmithing tradition of Echizen Uchihamono for four generations - the first area in Japan officially recognized as a center of traditional knife making. Masutani knives are known for their combination of high sharpness, clean design and very good usability in everyday cooking.
The blade is made of VG10 stainless steel (V-Gold No. 10) , which is one of the most used premium steels in Japanese kitchen knives. Thanks to the alloying with molybdenum, vanadium and cobalt, it offers high hardness, long edge life and good corrosion resistance. The heat treatment is adapted to the season, which contributes to the balanced behavior of the blade during cutting and sharpening.
The VG10 core is covered with a 17-layer Damascus sheath , which creates the characteristic wavy suminagashi pattern. Each piece is original and no two knives have exactly the same pattern. The polished surface emphasizes the fine structure of the Damascus and gives the knife an elegant appearance.
Thanks to the very thin blade with a maximum thickness of approximately 1.8 mm , the cut is extremely smooth and precise. The knife is suitable as a universal kitchen knife for cutting meat, vegetables and fish. The handle made of laminated reinforced wood with a ferrule is durable, hygienic and pleasant to the hand, which ensures comfortable control even during prolonged work.
