This is a so-called sandwich method, where the core is made of highly sharp carbon steel and the surrounding layers are made of stainless steel. Thanks to this construction, the knife is less susceptible to corrosion , which ensures greater hygiene and easier maintenance, without sacrificing the superior sharpness of the carbon steel.

The blade is hand-hardened by experienced craftsmen, as Shirogami steel requires precise temperature control and is not suitable for mass production . This makes the knife extremely sharp and easy to sharpen. The blade is also sharpened on a square whetstone , which guarantees excellent cutting properties.
