The Tosa Tsuboya Kiritsuke Gyuto 190mm is an exceptional Japanese kitchen knife forged traditionally in Kochi Prefecture (Tosa), made directly for our Only Sharp store. The Kiritsuke Gyuto is a hybrid shape combining the versatility of a gyuto with the elegant tip of a kiritsuke — an ideal choice for chefs looking for one knife for most kitchen tasks.

The blade, made from Aogami no. 2 (Blue Steel #2) with a rustic kurouchi finish, retains the authentic character of the forge. The kurouchi layer protects the steel and gives the knife a raw, artisanal aesthetic. The edge is hand-ground to an asymmetrical geometry, ensuring exceptional sharpness and cutting precision.

Materials

  • Blade: Aogami no. 2 — high-carbon steel with excellent ability to achieve and maintain extreme sharpness. Carbon content ~1.0–1.2%, added tungsten and chromium for improved durability.
  • Handle: Wenge — African tropical wood with dark, distinctive grain and natural moisture resistance. Pleasant to the touch, ergonomically shaped.

Care and Maintenance

  • Aogami no. 2 steel is not stainless — dry the knife thoroughly after each use
  • Apply a thin layer of camellia or neutral oil for longer storage
  • Wash by hand only, never in a dishwasher
  • Sharpen on Japanese whetstones (we recommend #1000 + #3000–6000)
  • Do not chop hard bones or frozen foods
