Product description

This smaller Japanese Deba kitchen knife is handmade by skilled craftsmen in the Sakai region, the historical center of Japanese knifemaking tradition. It is a single-edged, right-handed knife designed primarily for filleting smaller fish, slicing, and precise kitchen work at home.

The blade is made of Shirogami No. 2 (White Steel No. 2) carbon steel, which is valued for its very fine edge, high sharpness and extremely easy sharpening. The core is lined with soft iron , which increases the toughness of the blade and makes maintenance easier. Thanks to this construction, the knife is also suitable for users who are just getting acquainted with traditional Japanese carbon steel knives.

The more compact dimensions and lower weight compared to classic Deba knives allow for better control during detailed work. The robust blade geometry provides sufficient stability when working with the bones of smaller fish, while the sharp edge allows for a clean and precise cut.

The handle is made of magnolia wood , which is light, pleasant to the hand and traditionally used in Japanese work knives. The plastic mouth protects the joint between the blade and the handle from moisture and contributes to a longer life of the knife.

For longer storage, we recommend lightly treating the blade with protective oil.

Carbon steel is not stainless and may darken or develop a patina over time.
These changes are natural and do not negatively affect the functionality or sharpness of the knife.

Not suitable for dishwashers or dryers, as high temperatures and chemicals can damage the blade and handle.
