This Japanese Gyuto knife from Sakai Takumi Ajimasa represents a high-quality combination of traditional Japanese craftsmanship and modern functionality. It comes from the Sakai region of Osaka Prefecture, which has long been considered one of the most important centers of kitchen knife production in Japan. The knife is designed as a full-fledged universal kitchen knife suitable for professional chefs and demanding home users.
The blade is made of 67-layer Damascus construction with a core of AUS10 stainless steel, which is valued for its good hardness, stable edge and high corrosion resistance. This combination offers a very good balance between sharpness, toughness and ease of maintenance. The Damascus pattern is visible along the entire length of the blade and each piece has a slightly different pattern.
With a blade length of approximately 210 mm and a balanced geometry, the knife is suitable for cutting meat, vegetables and fish. The blade is ground on both sides, which allows universal use without restrictions on right- or left-handed people. The thin blade profile supports a smooth cut with minimal resistance.
The handle is made of yew wood (Ichii) , which is harder, more durable and darker than the commonly used magnolia or poplar. It has a modified hexagonal shape with a rounding , which provides a sure, comfortable grip and good control during prolonged work. The overall balance of the knife contributes to precise and quiet work without unnecessary hand fatigue.
