Sakai Takumi Ajimasa Santoku – V-Gold 3-ply construction (165 mm)
Product description
This Japanese Santoku kitchen knife with a blade length of approximately 165 mm is designed for everyday universal use in both home and professional kitchens. The model comes from the traditional knife-making region of Sakai and combines a practical design with an emphasis on easy maintenance and long service life.
The blade is made of V-Gold stainless steel, which is known for its good edge retention, stable sharpening behavior and high corrosion resistance. Thanks to the 3-layer DP construction, the hard core is protected by softer stainless steel layers, which increases the toughness of the blade and reduces the risk of damage during normal use.
Santoku is a versatile Japanese knife suitable for slicing meat, fish and vegetables. The straighter blade profile and compact length allow for precise and controlled work, even in a smaller workspace. The double-sided sharpening makes the knife suitable for both right- and left-handed people.
The handle is made of laminated wood , which is dimensionally stable and low-maintenance. The overall balance of the knife promotes a comfortable grip and reduces hand fatigue during prolonged work.

Recommendations for new knives
To achieve optimal performance, we recommend that you gently sharpen the knife on a whetstone before using it for the first time.
Regular light sharpening will help keep the blade in good condition.
Knife maintenance recommendations
After use, rinse the knife, dry it and store it in a dry place.
Even though it is stainless steel, we recommend avoiding prolonged contact with moisture.
Notice
Not suitable for dishwashers or dryers, as high temperatures, chemicals and mechanical stress can damage the blade and handle.
The knife is not intended for cutting bones, frozen foods, hard shells or other extremely hard ingredients that may cause the blade to chip.
Do not use the knife for prying, chopping, or as a multipurpose tool outside the kitchen – the blade is designed solely for cutting.
Avoid cutting on hard surfaces such as glass, stone or ceramic, which will significantly shorten the life of the blade.
We recommend using wooden or high-quality plastic cutting boards designed for kitchen knives.
