This handmade Japanese knife is the result of a collaboration between third-generation blacksmiths from Tadafusa (Sanjo, Niigata) and industrial designer Fumie Shibata . It combines traditional craftsmanship with modern style , resulting in a comfortable grip and excellent cutting performance .
The Santoku model is a versatile kitchen knife that serves as a more compact alternative to a chef's knife . Its straighter edge and shorter blade are ideal for slicing meat, fish, vegetables and fruit .
Premium Japanese SLD steel
The blade is forged from SLD steel , which, thanks to 1.5% carbon, reaches a hardness of 61-62 HRC Rockwell . The addition of 11-13% chromium makes it resistant to corrosion , so it combines the performance of a carbon knife with low maintenance requirements .
Sanmai construction – stainless steel layers for greater durability
The hard SLD steel core is protected by two layers of soft stainless steel , ensuring long-lasting sharpness and easy sharpening .
Ergonomic chestnut wood handle
The heat-treated chestnut wood handle is resistant to moisture and bacteria . The smooth connection to the knife head provides a comfortable grip and stable control when slicing.
