This filleting knife is a traditional slender deba, hand-forged in the Banshu region of Japan . It is a limited edition, produced in small quantities and only available in limited series. Each piece is an original, hand-finished by the blacksmith himself.
It is designed for filleting fish and preparing sashimi, and thanks to its shape, it is particularly suitable for blue fish (mackerel, sardine) or salmon.
The blade is hand-forged from rare White Steel (Shirogami) , known for its extreme sharpness and excellent edge retention. The core of this steel is clad in soft iron , providing a balanced combination of hardness, flexibility and ease of sharpening.
Each piece is original – hand-forged with a black hammered finish that highlights the traditional character of the knife and protects the surface from corrosion. The handle with a sakura motif and a delicate shinogi (raised ridge) offers a sure and stable grip even during precise work.
