Tosa Tsuboya Santoku Blade 180mm – Aogami no.2 Kurouchi
A Santoku blade from the Tosa Tsuboya forge for those who want to assemble a knife exactly to their taste. The Kurouchi finish (raw blacksmith's skin) gives the blade an authentic character directly from the forge – each piece is original with its own patina and character.
Specifications
- Blade: 180 mm
- Steel: Aogami no.2 (Blue Steel #2) – high-carbon tool steel
- Blade Finish: Kurouchi (raw blacksmith's skin)
- Type: Santoku – versatile chef's knife
- Delivery: Blade only, without handle
Blade Features
Aogami no.2 is a popular steel for premium Japanese knives – it sharpens easily to a very fine edge and retains it for a long time. The Kurouchi finish reduces food adhesion and naturally protects the blade from corrosion. The blade is reactive and will develop a natural patina over time, which further protects it and adds character.
Maintenance Recommendations
- Hand wash, dry immediately – carbon steel rusts without care
- Lightly oil after use (camellia or neutral oil)
- Sharpen on Japanese whetstones, recommended grit 1000–3000
- Store on a magnetic holder or in a wooden block
Warning
The blade is made of reactive high-carbon steel. Contact with acidic foods (citrus, tomatoes) may cause patination – this is a natural process that does not affect functionality or safety. The knife is not dishwasher safe.
