Japanese Santoku from Echizen

The Echizen Fukui Santoku 170mm is a Japanese kitchen knife hand-forged by artisans in Echizen City, Fukui Prefecture — one of the most significant centers of Japanese blade-making with over 700 years of history. Santoku ("three virtues") is a versatile Japanese knife ideal for slicing vegetables, meat, and fish — all in one tool.

The white steel (Shirogami) core is clad in stainless steel — this clad construction combines the excellent sharpness of Japanese carbon steel with the easy maintenance of a stainless steel sheath. The result is a knife that is sharp, durable, and accessible for everyday home use.
