Product description

This Petty knife comes from the Tosa region of Japan, famous for its traditional hand-forged blades. It is forged from elite Aogami Super (Blue Paper Super Steel) steel - one of the hardest and sharpest steels used for professional knives.

The blade is created using the fire-forging method – a multi-stage blacksmithing process in which the steel is repeatedly heated and shaped with hammer blows. This creates an exceptionally dense and durable structure that maintains its edge for a very long time.

The Kurouchi (black finish) protects the steel from corrosion and gives the knife a rustic, authentic look. Thanks to the double-sided grinding and shorter 150mm blade, this model is extremely versatile - suitable not only for preparing sashimi, but also as a smaller kitchen knife or paring knife.

The walnut wood handle is round, comfortable in the hand and in keeping with the traditional Japanese style.

The blade is treated with a protective varnish against corrosion, which must be removed before first use or allowed to wear down during normal cutting.
To achieve maximum performance, we recommend that you gently sharpen the knife on a water stone before using it for the first time.

Knife maintenance recommendations

After use, rinse the knife, dry it thoroughly and store it in a dry place.

Aogami Super carbon steel requires regular care and drying after each use, but it will reward you with exceptional sharpness and long life.
The Kurouchi finish partially masks the patina and minor oxidation.
Proper care will ensure a long life and consistent performance of the blade.

Not suitable for dishwashers or dishwasher dryers - high temperatures and chemicals can damage the blade and handle.
The knife is not intended for cutting bones, frozen foods or extremely hard ingredients.
