Product description

This Funayuki knife is hand-forged by Master Motokane from the Tosa region (Kochi Prefecture, Japan), which is known for its long tradition of making authentic "honmamon" blades — true handmade knives with the soul of Japanese blacksmithing.

The blade is forged from Aogami No. 1 (Blue Paper Steel) with a core of soft iron , creating a blade with an excellent combination of sharpness, toughness and easy resharpening. The black-forged (kurouchi) finish protects the blade from corrosion and gives it a traditional, rustic look.

Each knife is an original – hand-shaped, with a precisely aligned edge and elegant blade line. Even when using the same materials and methods, the details may vary slightly during hand-making – this is what makes each piece a unique artisan original.

Originally, this type of knife was used by fishermen on boats (Funayuki = "boat knife") to prepare fresh fish, but thanks to its universal design, it is now also ideal for cutting vegetables, meat and preparing sashimi.

The blade is coated with a protective varnish against corrosion - we recommend first use after resharpening to restore the original sharpness.
To achieve maximum performance, we recommend that you gently sharpen the knife on a water stone before using it for the first time.
We offer knife sharpening - we will be happy to recommend a suitable stone or service depending on your style of use.

Knife maintenance recommendations

After use, rinse the knife, dry it and store it in a dry place.
Regular fine grinding will extend the life of the blade and maintain optimal cutting performance.
Carbon steel can develop a patina over time, which is a natural and desirable phenomenon.

Warning – carbon steel knives

Aogami No. 1 carbon steel requires basic maintenance, but will reward you with exceptional sharpness and long life.
Proper care will ensure a long life and consistent performance of the blade.

Notice

Not suitable for dishwashers or dishwasher dryers - high temperatures and chemicals can damage the blade and handle.

Each piece is an original – minor irregularities, scratches or loose parts of the oxide coating are not defects, but evidence of the traditional manual process.
