The Gyuto from the Tosa smithy is a knife for those who want genuine, uncompromising Japanese craftsmanship. The blade, made from Aogami No. 2 (Blue Steel No. 2), is forged using the traditional fire-forging method, which compacts the steel structure and ensures exceptional and long-lasting sharpness. The Kurouchi finish – a raw, unpolished finish directly from the forge – protects the blade and gives the knife an authentic, industrial character.
