Product description

This Japanese kitchen knife with a blade length of approximately 165 mm combines the very high sharpness of carbon steel with the practicality of a stainless steel sheath. The core of the blade is made of Shirogami No. 2 carbon steel, which is valued for its exceptionally fine edge, high sharpness and ease of sharpening. The outer layers of soft stainless steel improve corrosion resistance and greatly facilitate daily maintenance.

The blade is made using the DP sandwich method, where a carbon core is sandwiched between layers of stainless steel. Thanks to this construction, the knife retains the characteristic properties of carbon steel, but is also less susceptible to corrosion than classic carbon knives. This contributes to greater hygiene and comfortable use in both professional and home kitchens.

Shirogami No. 2 requires very precise heat treatment, which is why the blade is hand-hardened by experienced craftsmen. The blade is sharpened on a square grindstone, which allows for a very thin and even edge with excellent cutting properties. Thanks to the thin blade geometry, the knife cuts easily, smoothly and with minimal resistance.

The handle is made of black plywood, which is dimensionally stable, durable and easy to maintain. The overall construction of the knife meets professional standards, but at the same time, thanks to the combination of materials, it is also suitable for home use.
