Tosa Tsuboya Deba 135mm VG-10
A traditional Japanese Deba knife from Tosa Tsuboya – handcrafted in Kochi Prefecture, where blacksmiths adhere to centuries-old steelworking techniques. The Deba is a specialized knife primarily designed for processing fish: precise head separation, filleting, and portioning. Thanks to its thick spine and single-bevel grind, it can also handle lighter chopping tasks involving small bones.
Specifications
- Blade Length: 135 mm
- Handle Length: 120 mm
- Steel: VG-10 (stainless)
- Hardness: ~60 HRC
- Grind: Single-bevel (right-handed)
- Blade Finish: Polished
- Handle: Magnolia (wa style)
Materials
The blade is made from VG-10 stainless steel, which combines excellent sharpness, corrosion resistance, and easy maintenance. The magnolia wood handle is lightweight, pleasant to the touch, and traditionally used in Japanese kitchens – naturally resistant to moisture.
Blade Features
The single-bevel grind ensures an exceptionally precise cut and clean filleting. The thick spine of the knife provides stability when working with tougher ingredients. The blade geometry is optimized for the Japanese style of fish preparation.
Maintenance Recommendations
- Hand wash, never in a dishwasher
- Dry immediately after washing
- Sharpen on a Japanese whetstone (recommended #1000 + #3000)
- Store on a magnetic strip or in a sheath
- Regularly treat the handle with natural oil (e.g., camellia oil)
Warning
This knife is intended for experienced chefs. The single-bevel grind requires proper technique. If cutting through bones, only do so with the heel of the knife; otherwise, the blade may be damaged. Do not cut through thick bones or frozen foods, and do not use the knife as a lever. The knife is not suitable for left-handed users.
