Tosa Tsuboya Santoku 180mm – Aogami no.2 Kurouchi
Santoku from the forge of craftsmen in the Tosa region on the Japanese island of Shikoku – an area with a deep tradition of tool and knife making. The Kurouchi finish (raw blacksmith's skin) gives the blade an authentic, industrial character and naturally protects it from corrosion.

Blade Characteristics
Aogami no.2 is a popular steel among Japanese chefs and knife enthusiasts alike. It sharpens easily to a very fine edge and holds it for a long time. The Kurouchi finish minimizes food sticking and gives the knife a rustic aesthetic straight from the forge.
Maintenance Recommendations
- Hand wash, dry immediately – the steel is not stainless and can rust without care
- Lightly oil after use (camellia or neutral oil)
- Sharpen on Japanese water stones, recommended grit 1000–3000 for regular maintenance
- Store on a magnetic strip or in a wooden block
Warning
The knife is made from reactive high-carbon steel. When in contact with acidic foods (citrus, tomatoes), patination may occur – this is a natural process that does not affect functionality or safety. The knife is not dishwasher safe.
