The Yanagiba is a classic Japanese knife primarily designed for slicing raw fish and sashimi – its long, thin, single-bevel blade allows for a single, smooth stroke that preserves the texture of the meat and achieves a perfectly smooth cut. This blade from the Tosa Tsuboya workshop is forged from Aogami no.2 steel and is intended for demanding chefs and enthusiasts who want to assemble their knife to their own taste.

Blade Features

Aogami no.2 is a popular steel for premium Japanese knives – it sharpens easily to a very fine edge and holds it for a long time. The single-bevel grind allows for precise, clean cuts without tearing fibers. The blade is reactive (carbon steel) and will develop a natural patina over time, which further protects it.

Maintenance Recommendations

  • Hand wash, dry immediately – carbon steel will rust without care
  • Lightly oil after use (camellia or neutral oil)
  • Sharpen on Japanese whetstones, recommended grit 1000–3000
  • Store on a magnetic strip or in a wooden block

The blade is made of reactive high-carbon steel – contact with acidic foods (citrus, tomatoes) may lead to patination. This is a natural process that does not affect functionality or safety.
